Plain, Two-Ingredient Tablets

Our two-ingredient tablets are made to highlight the unique flavors of the provinces the beans were grown in. Fruit flavors from co-planting shine through. Tablet sizes vary between 50 and 75 grams. .

  • Signature Noir, 64%

    The Signature Noir 64% is our classic, two-ingredient dark chocolate. A mix of cacao beans from Chiang Rai, Chiang Dao, Chiang Mai, Lampang, Chanthaburi, Phetchaburi and Prachuap Khiri Kahn provinces create brings out a notes of caramel, walnuts, almonds and sesame seeds along with banana, dried apricot, mango and mangosteen flavors. Due to different growing seasons and flavor profiles from each of the provinces, we change our recipe from batch to batch to produce a consistent rich chocolate flavor.

  • Fruits & Flowers, 80%

    This chocolate showcases the unique flavors of Chanthaburi cacao. These cacao beans take on the flavors of the mangosteen and durian trees they are planted among, resulting in a more tropical tasting chocolate. Despite a higher percentage of cacao, this chocolate stresses fruit flavors without any of the bitterness typically associated with higher cacao chocolates.

  • Lady Lanna, 80%

    A single province chocolate, using exclusively cacao grown and fermented in Northern Thailand. Our beans from Lampang province bring rich berry, red wine, black walnut and oak flavors to this chocolate. Despite a higher percentage of cacao, this chocolate stresses fruit flavors without any of the bitterness typically associated with higher cacao chocolates.

    This dark chocolate bar has such distinct bittersweet notes of tangerine and citrus, we are always asked whether we have added citrus in processing. No! This is a two ingredient chocolate made only from cacao beans and organic, unrefined cane sugar that showcases the amazing flavor range of fermented Thai cacao.

Tablets with Inclusions, Infusions, and Flavoring

Our multi-ingredient tablets are where we get to play with unique ingredients from around Thailand. Tablet sizes vary between 75 and 80 grams to allow for inclusions.

  • Pla Pla Pla, 54%

    The famous Thai fruit dip, Nam Pla Wan (น้ำปลาหวาน), inspired us to experiment with sweet fish sauce as an ingredient. We wanted the fish sauce to be present, but not to overpower the chocolate. And we needed the chocolate to support the idea of Nam Pla Wan. This worked best by making a slightly sweeter coconut milk chocolate as the base and then including the fish sauce as caramelized bites. The result is unexpected: super smooth, sweet-and-salty, and uniquely Thai.

  • Kinky Coconut, 52%

    Kinky Coconut is our Thai spin on a traditional milk chocolate bar. While there is no dairy milk powder in Thailand, coconut powder creates a creamy mouthfeel with the full flavor of chocolate. After much trial and error, we were able to find a beautiful, organic coconut powder that worked perfectly. A coconut cookie made from Bo.Lan’s organic coconut flesh adds texture and crunch.

    Our Crunch Time marries dark chocolate with local honey and cacao shortbread crisp – baked with rice flour. This bar is similar to a cookies and cream chocolate, but richer, darker, deeper and more satisfying. Crunch Time delivers the energy boost you need, when your project is close to crunch time!

    If you love raisin and nut chocolate, this is your new favorite bar! Cacao beans bring rich prune and raisin notes and pair perfectly with freshly roasted organic cashew nut bits. These flavors are amplified with natural Thai sea salt flakes. Rightfully one of our absolute favorites.

  • Berry Much!, 64%

    Dehydrated, unsweetened strawberries from Chiang Mai complement our Signature Noir 64% chocolate, bringing a tart acidity combined with some strawberry sweetness to the mix. Together, these ingredients produce sweet, caramel, chocolatey, and brownie notes. Sesame and banana shine also through.

  • Black Magic, 75%

    Freshly roasted Thai coffee beans are ground straight into this chocolate. Our friends at Karo Coffee Roasters (@karocoffeeroasters) created a special roast that blends perfectly with our cacao beans from Lampang Province.

  • Peanut Nutter, 64%

    A delicious spin on peanut butter and caramel and something for those with a sweet tooth. We use organic peanuts from Go.Organics, unpeeled and freshly roasted to get the strong and uncompromised taste of roasted peanuts locked into our bar. The caramel is made with palm sugar, resulting in a uniquely Thai taste.

  • Hall of Flame, 80%

    What could be more Thai than incorporating dried ‘jinda’ chilies into our chocolate? Our chilies are sourced from SlowFood in Chiang Mai, where they are toasted over a wood fire.  Combined with cacao beans from Lampang  and Chanthaburi Provinces, the result is a  spicy and smoky chocolate that goes perfectly with a glass of red wine or in your hot chocolate.
